
White Bean Lemon Cream

A silky white bean, lemon, olive oil, garlic, salt, and pepper cream for dips, spreads, or sauces.
Ingredients
- 1 can white beans, about 250 g
- 1 lemon, using half the juice and all the zest
- 1/3 cup olive oil
- Black pepper
- Salt
- 1 garlic clove (optional)
- To serve: black sesame, fresh cilantro, fresh parsley, or thinly sliced red onions
Process
- 1 Drain the water from the canned beans and keep the water if you want to use it for vegan mayo or chocolate mousse.
- 2 Gently grate the lemon zest onto the beans.
- 3 Start by adding the juice of half the lemon; you can add more after tasting.
- 4 Add a generous amount of olive oil, 1 tsp salt, and freshly ground black pepper.
- 5 Blend into a smooth cream.
- 6 Add a garlic clove if you like garlic.
- 7 Taste and adapt: if it is too acidic, add more olive oil.
- 8 If it is too bland, add pepper and salt.
- 9 If it has too much garlic, add more zest.
- 10 If it is too salty, add more lemon juice and/or oil.
