Sweet-Salty Mushrooms

Pan-fried mushrooms glazed with soy or tamari and agave or rice syrup, finished with optional thyme and black pepper.

Ingredients

  • Mushrooms: brown, white, and/or shiitakes
  • 3 tbsp soy or tamari sauce
  • 1.5 tbsp agave or rice syrup
  • Olive oil
  • Optional: thyme or black pepper

Process

  1. 1 If the mushrooms are small, leave them whole; otherwise cut them in any shape you like.
  2. 2 Heat the pan before adding olive oil.
  3. 3 Once the pan is hot, add the oil and fry the mushrooms on a medium-high fire, stirring frequently, for about 5 minutes.
  4. 4 Add a good splash of soy sauce and the sweet syrup.
  5. 5 Stir and fry until the sauce sticks to the mushrooms.
  6. 6 Add black pepper and fresh or dried thyme if you like.
  7. 7 Serve as a side dish with rice, noodles, mashed potatoes, or other dishes.
