Plant-Based Ground Beef

A savory mushroom and soy-flake mince for bolognese, lasagna, moussaka, or any dish that wants depth and texture.

Ingredients

  • 1 pack mushrooms, about 300 g
  • A similar amount in volume of dry soy flakes, using the smallest chunks you can find
  • 1 medium onion, cut into small pieces
  • 4 tbsp soy or tamari sauce
  • 4 tbsp olive oil
  • 1 grated clove fresh garlic or 1 tsp garlic powder
  • 2 tbsp onion powder
  • 1 tsp cinnamon
  • 2 tsp smoked paprika powder or paprika powder
  • 1/2 tsp ground nutmeg
  • Black pepper
  • 1 tbsp dried basil or oregano (optional)

Process

  1. 1 Marinate the soy flakes with the spices, soy sauce, and olive oil.
  2. 2 Mix well so all the flakes are covered in spices, then set aside.
  3. 3 Cut the onion and mushrooms into small pieces.
  4. 4 Fry the onions briefly in a bit of olive oil.
  5. 5 After a few minutes, add the mushrooms and cook on a medium to high fire.
  6. 6 When the mushrooms start losing juice, add the marinated soy flakes.
  7. 7 Keep stir-frying for only a few minutes.
  8. 8 Use the mixture in a sauce so the flakes absorb more water and flavor.
