Peanut Butter Cup Cake

A single-cup peanut butter cake that can be baked in the oven or cooked quickly in the microwave.

Ingredients

  • 2 tbsp spelt flour or all-purpose flour
  • 2 tbsp peanut butter, ideally only peanuts with no added sugars or preservatives
  • 2 tbsp unsweetened almond milk or oat milk
  • 1 tbsp plant syrup like agave, rice, or maple; granulated sugar or brown sugar can substitute
  • 1/4 tsp baking powder
  • 1/2 tsp pure vanilla extract (optional)
  • Dark chocolate chopped into small chunks

Process

  1. 1 Use a cup that is safe for a microwave or oven.
  2. 2 Add all ingredients to the cup and mix well with a fork.
  3. 3 Keep stirring through the lumpy stage until it resembles cake batter.
  4. 4 For the oven, preheat to 180C and cook for about 15 to 20 minutes.
  5. 5 For the microwave, set on high for about 45 to 60 seconds, until the cake has risen and springs back slightly when poked.
  6. 6 If it is not done after 60 seconds, cook in 15-second intervals until done.
