
Pancake Birthday Cake

A no-oven birthday cake built from stacked pancakes, banana, jam or marmalade, and chocolate sauce.
Ingredients
Pancakes
- 2 cups white all-purpose flour
- 2 cups oat milk
- 1.5 tbsp baking powder
- 1 tbsp sugar
- A pinch of salt
- 1 tbsp melted coconut oil
- Coconut oil for the pan
Layers and chocolate sauce
- Bananas, sliced
- Your favorite jam or marmalade
- 2 bars chocolate
- 1 tbsp coconut oil
- 1/2 cup oat milk
- Fruits and/or edible flowers to decorate
Process
Pancakes
- 1 Mix all pancake ingredients with a whisk until smooth.
- 2 Heat a frying pan until hot.
- 3 Lower the fire and add a bit of coconut oil.
- 4 Pour a bit less than half a cup of batter into the pan.
- 5 Turn the pancake when a good amount of little holes or bubbles appear on the surface.
- 6 Make as many pancakes as you want layers.
Layers and chocolate sauce
- 1 Slice the bananas and take out your favorite jam or marmalade.
- 2 Build the cake in layers with pancakes, banana, and jam or marmalade.
- 3 For the chocolate sauce, melt the chocolate bain-marie: place a smaller pot with chocolate inside a pot of water on a low fire.
- 4 Let the chocolate melt slowly.
- 5 Do not let the water boil or touch the chocolate.
- 6 Add coconut oil and oat milk.
- 7 Mix slowly and pour over the top.
- 8 Decorate with fruits and/or edible flowers.
