A bright avocado-free dip inspired by guacamole, made with green peas, lemon, garlic, tomato, and cilantro.

Ingredients

  • Frozen peas
  • Olive oil
  • Salt & pepper
  • Fresh lemon juice
  • Grated fresh garlic
  • Tomato
  • Fresh cilantro
  • Red onion

Process

  1. 1 Let the frozen peas defrost for less than 20 minutes.
  2. 2 Put the peas in a cup to blend.
  3. 3 Add olive oil, salt, pepper, garlic, and lemon juice.
  4. 4 Blend, but do not overmix; it can still be a bit chunky.
  5. 5 Chop the red onion very fine, cut the tomato into small cubes, and chop the cilantro.
  6. 6 Mix everything into the peas with a spoon or fork.
  7. 7 Serve next to chili sin carne, with nachos, or on toast.
