
Garlic-Ginger Roasted Cabbage

Seared cabbage wedges marinated with garlic, ginger, olive oil, salt, and pepper, then roasted until deeply flavorful.
Ingredients
- 1 green cabbage
- 2 big cloves peeled garlic
- The same amount of ginger as garlic
- 4 tbsp olive oil
- Salt and pepper
- Coconut oil
- Optional toppings: chopped cilantro, finely cut peanuts, black sesame seeds
- Optional serving ideas: rice, fresh young sprouts, shiitake mushrooms, peanut sauce, or tahini sauce
Process
- 1 Make the marinade by grating the garlic and peeled ginger into a small bowl.
- 2 Add olive oil, salt, and pepper, then let it sit while you prepare the cabbage.
- 3 Cut the cabbage from the core lengthwise into 4, 6, or 8 pieces, depending on size and thickness.
- 4 If you can, cut out a big part of the core, but keep a bit so the leaves stay together.
- 5 Melt coconut oil in a big frying pan and fry the cabbage on high heat until both sides are crispy brown.
- 6 While frying, place a lid on the pan so the cabbage can steam too.
- 7 Place the cabbage in an oven tray and divide the marinade over the slices with a spoon or brush.
- 8 Use all the garlic and ginger from the bowl.
- 9 Let the cabbage sit in the marinade from 1 to 6 hours if you can, but not longer than a day.
- 10 Roast at 185C for about 20 to 30 minutes.
- 11 Add toppings like chopped cilantro, peanuts, or black sesame seeds if you like.
- 12 Serve with rice, sprouts, shiitake mushrooms, and maybe a peanut or tahini sauce.
