
Blueberry Muffins

A quick plant-based blueberry muffin recipe with oats, whole wheat flour, almond milk, syrup, oil, and apple vinegar.
Ingredients
- 1 cup oats
- 1 cup whole wheat flour
- 1/4 tsp salt
- 1 tsp baking soda
- 1 cup frozen blueberries
- 3/4 cup almond milk
- 1/2 cup plant syrup, like rice, maple, or agave
- 1 tbsp oil
- 1 tbsp apple vinegar
Process
- 1 In a bowl, mix the oats, whole wheat flour, salt, and baking soda.
- 2 Take a small bit of the flour and sprinkle it over the frozen blueberries.
- 3 Mix well so all the berries are covered in a thin layer of flour.
- 4 In another bowl, combine almond milk, plant syrup, oil, and apple vinegar.
- 5 Mix the wet ingredients with the dry.
- 6 Fold in the berries gently.
- 7 Fill greased muffin tins approximately 2/3 full.
- 8 Bake at 180C for 20 minutes.
