Blueberry Muffins

A quick plant-based blueberry muffin recipe with oats, whole wheat flour, almond milk, syrup, oil, and apple vinegar.

Ingredients

  • 1 cup oats
  • 1 cup whole wheat flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1 cup frozen blueberries
  • 3/4 cup almond milk
  • 1/2 cup plant syrup, like rice, maple, or agave
  • 1 tbsp oil
  • 1 tbsp apple vinegar

Process

  1. 1 In a bowl, mix the oats, whole wheat flour, salt, and baking soda.
  2. 2 Take a small bit of the flour and sprinkle it over the frozen blueberries.
  3. 3 Mix well so all the berries are covered in a thin layer of flour.
  4. 4 In another bowl, combine almond milk, plant syrup, oil, and apple vinegar.
  5. 5 Mix the wet ingredients with the dry.
  6. 6 Fold in the berries gently.
  7. 7 Fill greased muffin tins approximately 2/3 full.
  8. 8 Bake at 180C for 20 minutes.
