
Beetroot-Quinoa Burgers

Plant-based burgers with quinoa, grated beetroot, onion, garlic, mustard, herbs, and breadcrumbs or oats.
Ingredients
- Olive or rapeseed oil to fry
- 1 red onion, finely chopped
- 3 large garlic cloves, minced
- 1 cup slightly overcooked quinoa
- 2 small beetroots or 1 big beetroot, peeled and grated
- 1 tbsp mustard
- 2 tbsp breadcrumbs, oats, or ground linseed
- Sea salt and pepper to taste
- Fresh herbs of your choice, like chives, parsley, or basil, chopped
Process
- 1 Mix all ingredients in a big bowl with your hands.
- 2 Make patties around 100 g each, or whatever size you like.
- 3 Fry both sides in a bit of oil until crispy on the outside.
