Beetroot-Quinoa Burgers

Plant-based burgers with quinoa, grated beetroot, onion, garlic, mustard, herbs, and breadcrumbs or oats.

Ingredients

  • Olive or rapeseed oil to fry
  • 1 red onion, finely chopped
  • 3 large garlic cloves, minced
  • 1 cup slightly overcooked quinoa
  • 2 small beetroots or 1 big beetroot, peeled and grated
  • 1 tbsp mustard
  • 2 tbsp breadcrumbs, oats, or ground linseed
  • Sea salt and pepper to taste
  • Fresh herbs of your choice, like chives, parsley, or basil, chopped

Process

  1. 1 Mix all ingredients in a big bowl with your hands.
  2. 2 Make patties around 100 g each, or whatever size you like.
  3. 3 Fry both sides in a bit of oil until crispy on the outside.
